If you were to recommend an anime to others - what would it be and why?
Depending on what genre others like here are a few I would recommend:
#1-Elfen Lied: Because to me it has a lot going for it. I love the story and its different from any other anime I have seen. (Please note: This anime contains violence and some nudity)

#2-Lovely Complex I would recommend this to anyone that likes romance/comedies because its light hearted and really funny.

Does it just have to be anime, or can it be manga too?
#1 - One Piece: Maybe I'm just gonna go off on one of my fanboy rants, but I just think One Piece has an incredible story, with Oda, the creator of the series, being a story telling genius in every sense of the word. His characters are funny and lively, and while they may have some typical shounen characteristics, they're all still unique, with a strong and deep backstory that'll evoke every emotion. While each arc tends to follow the same storyline, Oda is able to put a spin upon it each time that just draws you back in for more. Watch the first 45 episodes and decide from their if you like it.

#2 - Bokusatsu Tenshi Dokuro-chan: (literally Club to Death Dokuro-chan XD). Only 8 short episodes (4 episodes consisting of two stories each), this incredibly hilarious and violent anime will have you rofling. As stated, it's a bit violent (that's an understatement actually, it's very violent XD), but each splatter of blood is in the interest of comedic success.

Fairy Tail - A great manga on magic, if you like One Piece, Rave Master (drawn by the same mangaka), or any of those adventure-ish shounen manga, this definitely on the list. It's funny, it's got a great plot, and amazing characters. I wish I could say more, but it's so hard to pin down a good description that does it justice. xD

Sayonara Zetsubō Sensei - Not for sensitive people who'll nag over anything politically incorrect. This series is off rambling and making fun of- yes. Death. Or more specifically Suicide. The anime is animated by BONES, the same studio who did Eureka 7, and Ouran Highschool Host Club. It's ingenious in it's story, and is very similar to Ouran Highschool Host Club, with outrageous characters, an out-of-this-world base for each episode which is like a small story in itself. But the real coiner is that the main character, Nozomu Itoshiki, is a man with no hope, is constantly trying to commit suicide (of course, not expecting to succeed, and often creating comical situations) and the supporting heroine, his student who is freakishly optimistic, and is normally trying to save Nozomu from committing suicide, but putting his life in more danger then before.

Plot Summary: Sayonara Zetsubō Sensei revolves around a very pessimistic high school teacher named Nozomu Itoshiki who, at the very beginning of the series, tries to hang himself on a cherry blossom tree. Despite this effort of self-destruction, he is saved by an extremely optimistic girl known only as Kafuka Fūra (it should be noted, however, that in her effort to save his life, she almost kills him). She explains to him that it is simply unforgivable to hang himself on such a nice day, especially in front of such beautiful trees. She decides to nickname Nozomu "Pink Supervisor", and offers to pay him fifty yen to call him by that nickname. After having enough of the strange girl, Nozomu bolts to the school and starts his homeroom class, but the attempt to escape was in vain as he finds that the girl is one of his students. - Wikipedia Article

Hayate the Combat Butler (Hayate no Gotoku!)
Genre: Comedy
Plot Summary from ANN: 16-year-old Hayate is really down on his luck. His unemployed parents are good-for-nothings who waste the money they have on gambling. One day, his parents have racked up a huge gambling debt that they had to sell Hayate to the yakuza for the value of his organs. In a desperate attempt to avoid that fate, Hayate decides to become a “bad guy” and kidnap someone to be held for ransom, but his efforts to do so are mistaken as a confession of love by the girl he targets.
I would recommend this one because it is a great comedy! Anyone that likes wacky humor should really like this one.

Hmm, Well I'm gonna recommend this:
Law of Ueki
Genre: Action
The main character, Ueki Kousuke, was chosen by the God Candidate Kobayashi because of his exceptional sense of justice and will to help others. Ueki was given the ability to turn trash into trees from Kobayashi. While he uses this power to fight with (and to occasionally clean up the park), he wasn't really interested in the tournament until he was motivated to fight for an important person. He now fights to uphold that person's justice, along with the help of his companions and the many that he's inspired.

Keroro Gunso, Comedy / Parody based on the Manga. Plot - 5 alien frogs from outer space come to Earth to invade for the glory of conquest... but end up sidetracked when they become separated and at the mercy of a small group of humans to decided to take them in. Expect a light antic-filled plot, full of Anime references (esp. Gundam) and parodies.
Its quite a nice departure from serious anime like Bleach.

School Days
Genres: Drama, Horror, Romance, Slice of life
Plot Summary from ANN: Makoto Ito rides the train to and from school every day. However, at the beginning of his second term, he falls in love with a beautiful girl that also rides the train. Unfortunately, she barely knows of his existence. Her name is Kotonoha Katsura, and though they attend the same school, they are not in the same class. In an attempt to catch her eye, Makoto enlists the aid of a close female friend of his: Sekai Saionji. She helps him, despite the fact that she--unbeknownst to Makoto--is in love with him. Thus the three are bound in a love triangle of life changing proportions.
I loved this and recommend it because it is not your typical romance anime - in fact it gets quite dark.

I would recommend these two.
Bleach-
I think I could go to far this, but here we go.Bleach is a amazing journey of Ichigo Kurosaki, a high school student with the ability to see ghosts, and Rukia Kuchiki, a shinigami. The story is mainly about the world of these gods of death, on quest to save a girl.
One peice-
This show is simply amazing, It's about pirates on a hunt for onepiece (the name of the treasure) they all have different ability as a pirate Eg. Monkey D Luffy can stretch his arms and and all of his body.Along the way they get more people into there crew and come across some wakky adventures.

Jigoku Shoujo
Genre: Horror
It is about a girl named Ai Enma, Who takes revenge on people by sending them to hell, but you need to make a contract first, you too will be send to hell, only after you die though.
Great Anime, I RECOMMEND IT!

Fate/stay night
Genres: Adventure, Drama, Fantasy, Romance, Supernatural
Plot Summary from ANN: Shirou Emiya lost his parents in a fire when he was young and was later adopted by a sorceror by the name of Kiritsugu Emiya. Although he was full of admiration for his adopted father and yearns to become an ally of justice, Shirou has limited powers and was unable to become a strong sorceror like his father. That is until one fateful day, he was drawn into the Holy Grail War and had to summon a female "Servant" known as Saber in order to protect himself. It turns out that the Holy Grail War involves a series of battles among powerful sorcerors to fight for the possession of a relic that will grant one's wishes, the Holy Grail. There are altogether seven "Masters" who can summon their respective "Servants" from different classes known as Saber, Archer, Rider, Berserker, Lancer, Caster and Assasin. These "Servants" have to hide their names in order not to reveal their weaknesses to the enemies. The story revolves around Shirou and his entanglement in the Holy Grail War.
This is a great anime...with an interesting storyline.

School Rumble
Both are anime about the antics of japanese students in what is equivalent to US highschool (although school rumble includes a few male main characters). Lots of light humor, both are great anime to watch. School rumble also includes some parody elements.

Bokura ga Ita
Synopsis from myanimelist.net:
Nanami Takahashi welcomes the start of her high school life with great expectations of making as many friends as possible. There is much talk among the girls about a popular boy, Motoharu Yano, who has 2/3 of the girls in his middle school liking him. When Nanami asks Yuri Yamamoto, the girl sitting next to her, about Yano, the latter curtly replies that she dislikes him. Nanami is clueless of who Yano is until the day of the class nomination when she made a fool of herself by calling the name of her new friend wrongly. It turns out that she has actually met Yano along the corridors (unaware of his true identity) and he tricked her by providing a random name, resulting in the embarrassing incident in class. Nanami was initially mad at Yano but after a few encounters with him, she begins to find herself liking him. Later, Nanami learns from Yano's friend, Takeuchi, that Yamamoto's sister, who died in a car accident last year, was actually Yano's girlfriend...
This is a good love story anime....it doesn't have a typical ending....

Hunter x Hunter

The story is mainly about a boy who wishes to find his legendary hunter father by becoming a hunter where he made new friends and solving and surviving problems together~

Rental Magica
Genres: Fantasy
Plot Summary from ANN: Due to his father's disappearance, Itsuki Iba has to take over the family business: a magician dispatch service. Their family basically employs countless magicians and other supernatural beings in order to send them out to help those who need magical assistance. As a leader, Itsuki now has to be tough, commanding, and reliable, but there's one problem, he's a coward. Also, in order to run a successful business, he has to connect with his employees, which is more difficult than it seems due to his personality and lack of magical ability. But not only does he have to deal with his own employees, he also has to deal with those who threaten the family business.
I love this anime so far, it is fairly new but I think more people should check it out.

Death Note (even though stupid VIZ dubbed it...[whines])
I recomend it because it gets kind of trippy after a while, and it's really an amazing anime. Even though, like, now that it's on Adult Swim, everyone's gonna be like "nerr..." about it.
Cowboy Bebop
Omgsh. This anime is so depressing for me. Seriously. Certain episodes make me really sad. There are some episodes where it's not so sad, but most of them ended up making me sad. If you like depressing animes, totally check this out.

Eureka Seven-This anime takes place on a different world of ares, and its about a boy named renton who works at his grandfather;s shop for these coralians (flying type robots), and this girl eureka comes around and crashes her robot into the shop. little does he know he will go on adventures with her in the future, and join the club that she is in, the gekkostate.
Code E- alot of people didn't think this anime was good, but it is. Its about a girl who has this raditation abilities and can't be near anything electronic.

Full Moon wo Sagashite
Genres: Comedy, Drama, Romance, Shoujo, Supernatural
Plot Summary: Twelve-year-old Kouyama Mitsuki was devastated when she was diagnosed with a malignant tumor of the throat. She had made a promise to the boy she loves that she would one day become a singer, but her illness made singing impossible. To make matters even worse, two angels of death, Takuto and Meroko, appeared to Mitsuki and informed her that she only had one year left to live. This news provides an even greater motivation for Mitsuki to fulfill her dreams, and with a little bit of divine intervention, she begins her quest to become a professional singer so she can be reunited with Eichi before time runs out.
This is a good anime! Just watch it ^^

Higurashi no Naku Koro Ni
and
Higurashi no Naku Koro Ni Kai
Both because they're excellent horror animes. They both freaked me out when I watched them late at night. Both my favourite animes out there, by far.
The characters are excellent and well-acted, the voices are done beautifully (The Japanese Version), and it just comes together to create a great anime.
The animation for Higurashi no Naku Koro Ni is not nearly as well-done as Higurashi no Naku Koro Ni Kai, but you can tell what's going on.
This series does contain a lot of disturbing scenes and violence. :)
