Well, Azelf is one of the three elves, and I think that if you have one elf, it's not really worth it to catch the other two.
PLUS many people will trade you an Azelf.

When first caught, Mesprit has the better stats but it is also harder to catch while Azelf has nasty plot to boost it's moves.
I'd get all three but before the pokemon league just bother with Azelf or Mesprit or both if you want.

Erm no. Just no. Each elf performs a different role. Azelf is an excellent sweeper, Uxie is an excellent wall. Mespirit can fit anywhere inbetween, I used it as a Calm mind tank once, works a treat :)
SO yeah, get azelf. It rocks.
