EV's gone wrong...help?

I finished breeding Jolly Aerodactyls with 31 Attack and Speed IV's and I started EV training but the distributuion seems to have gone wrong somewhere along the line and I wondered if someone could help me?

Firstly I gave it pokerus and the macho brace and fought 32 (31 with the macho brace, 1 without, to get to 252) gyarados and 32 golbat then I made a mistake and fought 1 bibarel instead of bidoof. Realising my mistake I gave the aerodactyl one of each of the correction berries to reduce attack and speed by 10. Then I fought 2 bidoof (pokerus had worn off) 4 starly and 2 gyarados. I then carried on raising it's levels and when it levelled up I noticed its stats were all messed up, it's HP and defence were far too high, it's stats look like this:

Which according to IV calculators are way off!

Can anyone tell me

1:How to sort out it's IV's properly and
2: What mistake I made in the first place?

Oh, by the way, you said 'Pokerus had worn off'... It doesn't 'wear off', at least it's EV doubling effect doesn't. You said it worn off - this only means that Aerodactyl cannot spread Pokerus anymore, but the EV doubling effect is still in play.

What's the best way of correcting it, just give it a load of each of the berries and start again?

Because to find the IV', it must be untouched.

To get the best reading of IVs, you need to see your Pokemon's stat at level 100, while keeping track of its EVs.

I think if you use the EV reducing berries, at any level higher than 100 then your EVs are reset to 100, rather than taking off just 10.

So why you thought you had only taken off 10 EVs you could have just as easily taken off 152 EVs

I know it's IV's are 31 in speed and 31 in attack (I rare candied it before I started training it)
I bred it to be that way,

I'm just wondering what the best way of saving it is I guess remove all the EV's from everything and take attack and speed down to 100 (using the berries) and go from there?
