If I were to have a male Espeon and a Ditto breed, would that create just a baby Eevee ? Sorry if it seems like a stupid question all.. ^^;;

Yeah, you would have a baby Eevee. Same goes for anything that breeds with Ditto, regardless of if it's male or female.
