I have a question about the Experience Share. I'm EV training some pokemon for a good team, but, say I want them to gain 20 levels, so I take them to the Elite four, will they gain any EVs?

Yes, they will get the same number of EVs as the pokemon doing the fighting unless one has pokerus/power items and the other doesn't. :P

huh? hey dude, if you fight E4 your exp share holder will get EVs from all pokemon you fight... rather just give him the 510 ev points and then start training for the level-up..
