Pretty sure people already write the crap out of that in fanfic, too. :D Although I haven't actively read fanfic in years. Unless it's troll fic.

Knowing the fandom, if the anime ends a fanime will ensue and they will be adults in such. I can imagine it already...

I hope before the end of the anime we get to see them grow up! It's sad that they're all still kids. :(

I hope you mean maturity comes with age. In either case, she should have matured more near the end of her journey since she was with Ash and Brock for, what, a couple of years, it seemed. But apparently nobody in Pokemon ages because lol neverland
