I like.... Torchic and Bulbasaur. They have good defense stats.

The Kanto starter Pokemon have always been the best IMO, my favourite out of them being Squirtel. However, Piplup is also among my favourites now, alongside them (the first starter I've really cared for since that era, actually)

Kanto - Charmander, because he evolves into a very strong Pokemon
Johto - Totodile, for similar reasons
Hoehn - Mudkip, because he looks the best to me and I gave him an Everstone to keep him that way.
Sinnoh - Turtwig, because I won a Turtwig plushie in a crane game earlier today. Until then, I didn't like the Sinnoh starters.
