Do you bake things? If so how often? And what do you bake?

I pretty much only bake sweet things. It's no fun to make savoury stuff, in my opinion. It's mostly cakes, and they're pretty much always when people like grandparents are coming over.

I don't bake often. When I do though I usually make simple things like cookies or cup cakes.

I usually bake once every week, twice or more in some occasions. It's always sweet stuff, like cakes, muffins or cupcakes, and I do them usually for the weekend when the whole family is home, or friends/relatives are coming over. I've never made cookies, because no one would eat them at home.

Oh, the funny thing is that I don't even eat the things I bake. I just eat some of them to see what I should correct.

I bake cakes every month or so...or attempt to. Most of what I bake turns into a complete disaster; I'm not the most culinary-inclined person one is likely to meet. I tried baking bread once, since my mother has a bread mixer I figured I'd give it a shot...it deflated somehow. I've never tried cooking anything savoury, or whipping up an evening meal. Well, I've assisted my father a few times; he taught me the basics of cooking, but it's not something I'm very good at doing, and I never need to do it, so...I don't. I'm happy just sticking something in the oven. xD

My accidents are no worse than my mother's - my cakes at least LOOK edible; hers blacken a lot more than mine do! - but they are quite spectacular sometimes. Last time I tried to experiment my test caught on fire. I'm better off sticking to recipes and praying whenever I bake. xD

My first love in cooking is baking. I like cooking anything, but I find baking to be the most enjoyable and rewarding personally. I love to make cookies and cakes from scratch! I have a really good chocolate fudge cookie recipe and gingerbread recipe I like to make a lot. I also had a banana bread recipe but idk where it went :(. More than just desserts I love baking savory breads too!!

My dad forces me to bake him chocolate chip cookies all the time >_>. I only do simple things like cookies, cakes and magic cookie bars. The last thing I've baked is twice baked potatoes my brother is obsessed with.

Before August, I had never baked a cake from scratch. It'd always be from a box mix. My savoury stuff always ended up overdone or underdone with a crisp outside.. or mush. After being really annoyed about not being able to find a proper doughnut in London, I decided that my lack of baking skill has needed to change.

Since then I'd baked a lamb wellington, various different cakes (including angel cake, torta caprese, polenta cake, rainbow cake, chocolate cake, and red velvet cake,) cupcakes, doughnuts, blondies, and sugar cookies.
I still have never made chocolate chip cookies, apple pie, or gingerbread from scratch. I also want to try making pizza from scratch, too! And creme brulee and souffles! Carrot cake, banana bread, ciabattas, pandoro, and cinnamon rolls are also all on my list.
Part of me doesnt know if I want to experiment with loads of different cakes first, or try one recipe and experiment with that bake to try and perfect it!

Going off on a tangent here:
I am very jealous of those who can cook indian food btw. I am so unfamiliar with the authentic flavours (melon seed paste!) that I feel like I really don't know what I'm doing. I can't handle spicy food but I want to try and learn how to make proper indian without the big spice! Perhaps trying something like a simple.. dal (is it called dal? the chickpea pancake?) or that spinach and paneer dish (I also forget the name, sorry!) that I know wont have loads of chilli.

I like cooking and where I don't consider myself AMAZING (those masterchef junior kids really put me to shame!) I like to think I can bang out some good dishes even if I have to improvise.
My heritage is Italian and it seems like naturally, any italian-inspired dish I attempt for the first time people are REALLY impressed with.. and I dont know if that's just because naturally I've grown up with that or what. Trying to branch away and try new cuisine has been fun but I wish I could have more experience. I think the most out of the box dish I had made lately was Norwegian Gravadlax (cured salmon.) Anyway.. I'm rambling now.. but yeah.. I'd love to know more Indian cuisine. I feel like there are just so many names for different curries that I get confused on what's considered the base of a certain TYPE of curry. Or even the desserts!

ANYWAY yeah I'll shut up now.. I like food..

I like the idea of baking, but no so much the actual process. There are so many steps, and the mixing and sifting... ugh.

I am laziest when I have to bake something. Cakes are awesome for this. You mix them and then tip it all into a tin. Fab. Biscuits, cookies, cupcakes and muffins are awful for this! Especially if you have to ice anything. With a cake I tip on the icing and smear it around, once. I can handle once.

That being said I do have standards. I have never used cake mix in my life and never will.

I far prefer regular cooking to baking.

God no. Cooking is very specific, but any marginal error can be fixed with a slight tweak. With pastry cooking you basically have to be perfect, otherwise the dessert can come out flat, tasteless, too fluffy etc. Its too precise for me to give a damn.

I started kinda baking at like 14. It was about 2am and I was going through our kitchen, and we had no sweets. Blasphemy. So I googled a peanut butter cookie recipe and accidentally made like 4 dozen cookies out of a 2 dozen recipe. Why does that always happen?! Lol. Well, either way, they were good and it was easy, and I've been making sweets ever since.

Since then I've done a crap load of brownies - including those wonderful, gooey lava cake brownies - a few different cakes, cupcakes a couple times, turnovers, strawberry shortcake, so many things... and making chocolate crinkles and chocolate chip cookies are practically mandatory for living here. I don't think my father nor my boyfriend would survive without them at this point.
Peach cobbler is probably my favorite thing I've ever made. It's one of those things I've done so many times that I know it by heart. It's so cheap and easy and light and fluffy and it makes the whole house smell like cinnamon and nutmeg and peaches and omg. <33 For the longest time I couldn't find my pie pans or my cake pans, so I just resorted to cobblers, crumbles, and other "upside down/messy" pies. I don't even know if I could make a 'real' pie at this point. :P

That said, I bake pretty frequently, lol. But that's fine by me! I enjoy it. I don't even eat a lot of the things I make, but I know other people love them. I actually hate cake, but I love making and decorating them, and other people like eating them, and that's enough for me. c: I'm actually hoping to pick up one of those Kitchen-Aid Artisan 5-quart mixers, in ice blue. Especially with that ice cream attachment, I could finally make dairy-free ice cream easily, haha.

Sugar cookies are the one thing I've always wanted to do right, but they always just end up tasting like sugary crackers. My aunt made these amazing sugar cookies but she never shared her secrets, lol. Icing is easy - first time that came out perfect and amazing and I love it. But my cookies always fall flat and sad. :c

I like baking~ I mostly just stick to simple things like cookies, brownies, and the like, but I'll occasionally make a cake. .-. It's pretty nice, and it's a nice thing to do every once in a while. Haven't made anything from scratch in a while, so a lot of what I've been making has been from the box/package.

Never do I bake. Sorry, my diet consists of cold foods, snacks, and restaurant dishes.

I really don't eat that often at all, let alone cook. Most of my energy comes from drinks, usually tea or water.

Cookies, cupcakes, fudge, brownies, crisps, tarts, pies, I will bake it all.
I made these super delicious frosted maple cookies a couple weeks ago and omg they taste like maple bars and I have a new favorite cookie.
Cookies are probably my favorite thing to bake because there's a really fun science behind it and I know how to come up with my own recipes, and tweak existing recipes to make the kind of cookie I love or anyone I'm making cookies for loves.
In the last few months (due to the holidays), I've made;
sugar cookies, maple cookies, chocolate chip cookies, chocolate and butterscotch chip cookies, oatmeal butterscotch cookies, spice cookies, gingersnaps, molasses cookies, eggnog cookies, mint cookies, mint pinwheel cookies, cinnamon pinwheels (taste like mini cinnamon rolls), chocolate and chocolate-peanut butter no bakes, soft chocolate mint sandwich cookies, soft chocolate coffee sandwich cookies, chocolate fudge, peppermint vanilla fudge, divinities, soft buttermints, fudge brownies, peanut butter chocolate brownies, gingerbread cookies, gingerbread cupcakes, chocolate mint cupcakes, gingered maple cupcakes, banana muffins, banana bread, banana spice bread, zucchini bread, triple layered cherry filled chocolate cherry cake, pistachio pudding cookies, tons of different spritz cookies, and ommgg I don't even know what else. The list goes on infinitely. I realized I bake too much and I should probably stop before everyone around gets on the scale and gets angry with me.

I have to avoid a lot of certain food additives (all of which are quite common), so I tend to have to cook from scratch, especially when it comes to baking. As a result, I can make pies, cookies, etc. from scratch (which is surprisingly easy). Because I generally enjoy baking, I end up making too much food, so I give it away to my neighbors.

I've already posted here but just wanted to mention that today I bought some Truvia Baking Blend since it was on sale.
Does anyone have any experience baking with sugar-substitutes? Usually they can leave a bad aftertaste or they don't come out right because of the physical ratio (usually you need to use 1/3 of the sweetener therefore less mass in the actual cake) but the baking blend I think has bulkers to avoid this?

I know generally I can google for this, and I will, but sometimes it's nice to hear from friends here with personal experience :3

Also wow Ruma that's a lot of cookies! I have never actually made a chocolate chip cookie or gingerbread from scratch. Most I've ever done was sugar-cookies (which failed as they spread too much) and buckwheat pistachio-cherry biscotti (which were a big success), I did my fair amount of baking over the holidays too (buttermilk biscuits, soda bread, dutch appeltaart, drop-doughnuts made with old-fashioned dough, and a few other savoury dishes.

I love baking--and all forms of cooking. Mostly because of funds and a lack luster kitchen I'm relegated to baking things from pre-made mixes/packages, but I easily prefer making something from scratch. My favorite thing to bake is probably bread. It's delicious! And there are sooooooo many different things you can do with it that you can bake bread every day and never make the same thing until the day you die.

Baking? I actually looove to bake, haha. Well, honestly, part of the reason was because of the old saying, "the ladies looove a man in the kitchen", but, it became a hobby for me because there's honestly almost nothing I love more than a great homemade meal. ;__;

I bake for charities and food banks sometimes, usually on special occasions, but, sometimes just for the heart of it. I looove baking chocolate brownies (in which if you guys have any recipies for good brownies, or if you have any special techniques to make them moist and good, I'd LOVE to hear them!) as well as some sugar cookies, and honey buns from time to time. :3

Well, sugar really gives baking goods their moistness and a good texture, I'd have to say - I've only used refined fructose mixtures which are sweeter than like a normal sugar, which are good, but.. sometimes baking with them, the products don't 'taste right', like, they taste... what's the word.. a little bland? Or flat?

That's my experience at least, haha. :3

Thanks! And yeah, in a sense I do agree. It's the "butterscotch" flavour you get from unrefined sugars that help bakes from being a little bland. I am thinking of subbing in some dark muscovado sugar with the rest of this truvia blend when making a standard cake mixture and seeing what happens.
White sugar tends to "crisp" cookies whereas brown sugar will make cookies softer or moister/ chewier. Sometimes adding a bit of both can give an interesting texture to a bake.

I have read up on some experiments done with cinder toffee using different syrups, brownies using different substitutions and methods (creaming butter and sugar instead of browning butter, for example) and and cookies using different baking trays and other substitutions.

I can pass around links if anyone is interested in a read (I'd just have to dig them up first..)

I haven't ever used a sugar substitute in baking, and I don't use shortening either. It just seems to produce flavors that seem to be lacking or a little weird.
Brown sugar makes really nice cookies, definitely. It's the added molasses in the sugar that holds moisture really well, and adds such an awesome flavor.

Yum! I've never made biscotti! Or doughnuts, which I bet were delicious! :o
Too avoid your cookies spreading too much, try using less baking soda. I'll sometimes omit baking soda, or I'll do half baking soda and half baking powder, or just baking powder if I want a fluffy or more dense cookie depending. But in short, baking soda will make a cookie spread out more.

By the way! Anybody else make cinnamon rolls or sweet rolls and have any recipes they could share?
I love the things, but I've only made them twice. They turned out pretty well the second time, but not so much the first.

Funny you should say that, Ruma! I've been intending to bake some Cinnamon Buns, lately. If they're any good, I'll give you the recipe!

As for me, I've been cooking since I was really young. It all started when my mother would draft me to help her cook Christmas dinner. Now, all these years later, I still cook! I even considered becoming a chef as my career choice. While I don't think I'll do that, I'm quite famous in some circles for the way I can treat a fish or potato.

Recently I've taken an interest to learning how to bake properly. I can make some baked dishes, such as Shepard's Pie, Baked Pasta, Pizza, and French Onion Soup, but it's not exactly the same as whipping up a nice batch of Blondies or a lovely Soufflé.

Personally I'd love to read those articles, Kura! If you don't mind finding them again, that is. :)


Also, about the title... Muffins. Because I'm a problem solver.

Gosh I have loved baking ever since I was a kid and used to bake out of the premix boxes. I took food technology every year at school from Year 7 till Year 11 and then took a general cooking class in Year 13 before I graduated. Never the less, whenever we got to bake, it became my favourite day of the week.

Unfortunately I'm so busy these days I don't get to bake as often, but I do take every chance that I can bake.
My personal favourite right now is making chocolate truffles. Despite they're pretty easy, I just love the taste of them and my friends love to eat them too and it makes me happy seeing other people eat food that I make.

Right now I'm in the process of trying to make a perfect Leche Flan. It's apparently easy to make, but sometimes mine comes out a little thicker than I want it too. It's all about heating it right and timing. Next will be the family's special banana cake which I've always wanted to learn since it's a bit different to most of the banana cakes I've eaten.

Gosh there's so many things I want to learn to bake like crema de fruita and probably some of the more complex desserts, but never enough time.
If I wasn't pursuing a design career, this would have definitely been my first option. I'd love to study patisserie at the local school here even after I graduated, but the tuition here is extremely expensive so I'll stick to whatever spare time I have.

I actually asked for a ceramic baking set for christmas since my dad was moving and I wasn't going with him and he had some. I really like to bake just about anything, I like food and I like cooking. Since I got the gift a couple of days before christmas I've used it to make some homemade cinnamon rolls, some lasagna, and something else that I can't remember.
