I recently started using French cheeses in my cheesecakes, because they're a lot nicer than the American plastic we call cheese. I can't recommend it; go to your local cheese warehouse and buy a good Gouda. THE CAKE WILL TASTE SO MUCH BETTER.

Had some homemade white cupcakes last week. So good. Nothing quite like baked goods that you can see be baked.
