I always saw Normal type as being the "this pokemon doesn't have any notable elements associated with it" type, but that was somewhat ruined by the addition of Pokémon such as Sawsbuck that're given both Normal and an elemental typing haha (unless the Normal is there to indicate an 'affinity' to the typing rather than having 'elemental powers' from it?). I think Normal types now mean a much more general type of Pokémon - beast/animal like Pokémon perhaps? Or perhaps just something that if you kick it it'll do lots of damage :p
