Correct, but don't forget to use vitamins also (HP up, carbos, calcium, ect.).
1 vitamin = 10 EVs
Vitamins max out after you've reached 100 EVs, so make sure to take advantage of those first 100 by using vitamins instead of fighting extra pokemon.

In Sunnyshore City, in shop near the coast (where you can buy seals) there is a woman who will award the pokemon in your lead spot with an "Effort Ribbon" if you've maxed out their EVs. Conversly, I've you are not finished, she'll say "It needs to work a little harder."
As the above poster mentioned, you will have to keep up with the specifics on your ev totals, but at least you'll know when you've finished.
