As it says above this is going to be my first time ev'ing a pokemon and I have a few questions to make sure that I do it right.
I am going to train bastiodon with the stats 252 HP / 188 Atk / 60 Def / 8 SpD.
So to start with the HP stat I should use the Power Weight on him and fight Shellos, and Gastrodons. Now if I have the power weight equipped I will get 5 evs from shellos and 6 from gastrodon right?
And then after I get all the hp I will go on to the next then the next.
What I really need to know is once I think I have them ev'ed all the way up how do I know if they really are? Do I just have to keep close track myself? And once I think they are all ev'ed should I just do the elite four over and over to get them up to 100?

1. Yes, 5 and 6 are right.
2. You can check if you have all 510 EVs by going to the Sunyshore Market and getting the Effort ribbon. If you have all 510 EVs, you will get the effort Ribbon.
3. However, the game doesn't tell you how many EVs you have in each stat, so you'll have to keep track of those yourself
4. Personally, I think there are better ways to level up than the Elite Four, like hanging around the Battle Zone and battling the trainers there.

Ok thanks, and also will I get the Ribon as soon as I have maxed out the 510 stats, after talking to the person?

Correct, but don't forget to use vitamins also (HP up, carbos, calcium, ect.).

1 vitamin = 10 EVs
Vitamins max out after you've reached 100 EVs, so make sure to take advantage of those first 100 by using vitamins instead of fighting extra pokemon.

In Sunnyshore City, in shop near the coast (where you can buy seals) there is a woman who will award the pokemon in your lead spot with an "Effort Ribbon" if you've maxed out their EVs. Conversly, I've you are not finished, she'll say "It needs to work a little harder."


As the above poster mentioned, you will have to keep up with the specifics on your ev totals, but at least you'll know when you've finished.
