So I work for a certain games developer and this month we have decided to have a Pokemon tournament around the office. It's all gotten very hitted and I've been able to make it into the second round. My problem is I'm up against a guy who have infinite knowledge and skill when it comes to Pokemon.

I've started building a sweet perfect team and run into a bit of a snag. After time spent getting a perfect Garchomp I have finally gotten a Gible that specialises in attack and speed. So I super trained it in those areas maxing them both up and then put it in to the day care to level up to evolve into Garchomp.

Now here is my issue, it's just hit lvl47 so I took it out to get it to evolve, but it keeps getting destroyed in battles it should normally be winning. Have a made a huge mistake putting it in the day care to lvl up from 1-47? I've maxed out it's EVs already, but does the fact I left it in the day care rather than train it make it...soft? :-/

No, that shouldn't matter. Level ups are level ups, regardless of how they were obtained, and you super trained it beforehand. Couple of things though:

1) It is a Garchomp right now, not a Gible, yes?
2) What are its moves?
3) What's its nature?

Sorry, I got the numbers mixed up, It was lvl42 when I took it out. Not it's a lvl46 Gabite. Yeah I super trained it in attack and speed before hand.

Moves are:
- Earthquake
- Outrage
- Stone Edge
- Crunch

It's nature is jolly.

That's a very good nature for a Garchomp. The first thing you need to do is evolve it. The moveset isn't bad at all, but Swords Dance is a better option than Crunch. You get enough coverage with Outrage, Stone Edge, and Earthquake, and the extra power provided by Swords Dance is very helpful. Good items to give it (for when you battle in the tournament) are Focus Sash, Yache Berry, or Haban Berry.

or Garchompite. Garchompite is a good item as well. :P

No Chance has already mentioned pretty much everything, but I just wanted to add that Lum Berry is also a good item for Garchomp: cures Outrage's confusion, and can let you set up a swords dance while your opponent wastes a turn trying to use status (such as Will-o). Good luck in your tournament, and make sure to have fun.
