I'm building a three pokemon party for single battles,
So far I have:

Umbreon: SP.Def Curse, Wish, Batton Pass

Magnezone: Sp. Attack Choice Specs,Thunderbolt, Volt Switch

Both are slow, I need one with high Speed stats, and guessing it would be Flying Type, so to avoid Ground Attacks (Switching Magnezone).

Please show suggestions for this one.

Talonflame, Mega Pinsir and Greninja are examples of fast Pokemon to consider:

or

-U-turn
-Tailwind/Roost
Nature: Adamant
EVs: 252 Atk/4 Def/252 Spe
Item: Choice Band/Sharp Beak/Sky Plate
Ability: Gale Wings

or
-Bulk Up
-Brave Bird
-Roost
-Taunt/Will-o-Wisp
Nature: Careful
EVs: 248 HP/8 Def/252 SDef

Ability: Gale Wings

Greninja:
-Hydro Pump

-Extrasensory
-Dark Pulse/Hidden Power (Fire/Grass)/Grass Knot/Spikes
Nature: Timid
EVs: 252 SAtk/4 SDef/252 Spe

Mega Pinsir:
-Swords Dance

EVs: 252 Atk/4 Def/252 Spe
Item: Pinsirite

May I also suggest Gengar, as it both gives you an immunity to ground and fighting, two of the most prevalent weaknesses on your team. There are lots of set options for Gengar, including LO Sub+Pain Split/3 offensive moves, Black SLudge Sub+Disable, or even Choice Scarf if you want to be super speedy. So while it may not be as fast as all the Pokemon above, I feel it fits your team rather nicely, and only leaves one of your Pokemon (Magnezone), vulnerable to a super effective move (fire).

I personally enjoy using Megazard Y. Most people anticipate a Megazard X set so they'll start off with an EQ. Drought allows you to one turn solar beam which means you cover rock, ground, and water Pokemon. Overheat STAB is ridiculously strong with your boosted Sp.Atk and Megazard Y speed isn't something to laugh about. Air Slash is STAB and gives you a good coverage over fighting and bug types. Dragon Pulse covers Dragon types.
