It's very simple.

This is my team currently.

Empoleon, Rhydon, Haunter, Metagross.

I need one electric and one fire Pokemon that I can get. I was thinking about Ninetales and Lanturn.

This is not my real team but I need one quickly. Also two of those wont be EV trained. I will just catch 2 of them, maybe give them some vitamins, up to 100 and make him a rare candy buffet, then off to Platinum it goes.

So, if anyone can suggest which Pokemon, moveset, items, anything, it'd be highly appreciated :)

If we're staying strictly in Platinum, Infernape and Magnezone are good choices for a Fire type and an Electric type. If you don't want to add another Steel type to your team, I remember hearing that Electivire wasn't bad back in 4th gen. Oh, and I wouldn't bother with Ninetales at all; the only thing that ever made it remotely useful is Drought, which is doesn't get until Gen 5, and in Gen 6 it's outclassed as a sun summoner by Mega Zard Y (and Groudon), while several other Fire types outclass Ninetales as a fire pokemon.

Do you need 4th Gen sets or 6th Gen sets for these Pokemon?

As far as fire types go I personally find Houndoom to be more useful then ninetails. I've heard that Magmortar is a pretty good fire type as well. For electric types, I myself tend to lean towards Raichu and Jolteon. However I used a Lanturn once and found it was super tough. That pokemon more then pulled it's weight when I was faced with the elite four. So if you're looking into Lanturn, I say go for it! The little guy may just surprise you.
Oh! one other electric type would be ampharos. It's easy to find and use.
