I think I have a problem if it comes to playing the video. Lately I've been noticing when I play some videos in several video players (including Pot Player as my main), no matter how big the resolution was, there is always a sudden laggy pause at the beginning of the video that I played, which is no good for me, even though the rest of the video playing was pretty much okay, with no stutters and everything.

I'm pretty sure it was fine before I decided to tinker with the video processing settings and something related to it to improve the SD video's image quality when in HD monitor and on Fullscreen, and I was forgetting which options did I edit (or the default settings of video processing settings in particular) :( So... I'm wondering how to restore it back to fix this issue?

If there's a configuration file make a backup copy of it and then remove the original one. That way everything should revert back to default settings. After that you'd need to reconfigure whatever you're using, though.

Okay, it turns out the update of PotPlayer yesterday comes with FFmpeg settings alteration which makes it work like it used to be, so it's fixed for now :)
