I usually don't EV train, but I do grind when I am too underleveled for an area. I hate using items, so I like to be able to beat trainers under "normal" (for lack of a better term) circumstances.

I sometimes EV train my in-game team, though generally only a few members. I've started to shy away from doing that because it isn't really worth it, but still, it's fun to do from time to time. For my starter and other one-time Pokemon, I try to get the best nature and IVs I can; for others, I just go with whatever the game gives met. I like to know that I've done what I can to make the key members of my team competitive, even if I'd never actually use them in a competition.

Mostly I do grinding all the time and that's why my team was bit rusty when facing secret trainers or battle facilities.

Gen 1 - 2: Just grind them until the levels are satisfying for me.
Gen 3 - 4: Don't grind them much, let them go challenge underlevelled.
Gen 5: Lucky Egg + Audino grinding. This causes overlevelling.

I never did EV training so far.

I lost interest in training my Pokemon, so I decided to just take whatever I can get by battling trainers and some random encounters on my way, without stopping for additional level adjustment. As far as EVs are concerned, I like to do some EV training whenever I play gen 6 and decide to use pretty weak Pokemon which have trouble getting things done, especially when underleveled.

The best way to train Pokemon is no just never run from a wild Pokemon battle. If you happen to stumble across a wild Pokemon, always fight it. Doing so will make sure that you are appropriately to overleveled without having to actively grind. Fighting every trainer works too.

For the story I just capture and train whatever since they're more than enough to get through things, then afterwards I start breeding for IVs/EV training and the like. Gives me so much more to do post-game and adds a whole new layer of gameplay.. I spend probably 5-10x more time breeding and training those Pokémon than I do actually going through story mode, heh. Those are trained via trainer rebattles in secret bases (OR/AS), especially Blissey bases.

When going through the story I battle anyone in sight for the experience. :D But that's just trainers. Wilds I'll either repel or catch those I don't have yet.

When I'm going through the story, I don't worry too much about EVs or IVs. I just try to get as much experience as I can. When I'm building a competitive team, I EV train the heck out of them. Thankfully that's made much easier in 6th gen with Super Training, but in other games I do it the hard way--battling Pokemon that yield the EVs that I'm looking for until they're maxed out :P

I make it a point to do all the grinding first before continuing on with the journey and use repel afterwards because I hate being interrupted by wild pokemon.

As for post-game, I am very meticulous with the IVs and the EVs although I don't use them much for competitive battling. I just want to see them and treat them as my trophy 'mons.

In 6th gen., I turn the experience share on/off as needed. If I feel I am getting too over leveled, I turn it on for a while. Vice versa if I am too under leveled. I'm actually a fan of the new experience share, as I am not a fan of grinding against wild Pokemon if I don't have to.

For me it's pretty much the same as G0!d.
Except I use my Pokemon in competitive battling even if I lose often. I'll train the Poemon I like so it's a bunch of NU, UU, RU, BL...

I save IV breeding and EV training for after the main campaign. I really only care about leveling up my in-game team. Even then, I don't use Super Training when I EV train since I find it very tedious. I prefer going through Hoard Battles and with Pokerus, it makes the hoard method much faster.

If I'd still play in-game at this point, I wouldn't really care about EVs or natures...
