I finally got a snorlax with the IV's i wanted 29 HP / 31 Att / 31 Def / 31 Sdef - it took me a day and a half just getting one with the stats i was looking for. My goal snorlax looked like this...

Snorlax - (CAREFUL) 'Thick Fat'
HP - 465 (464 gets you 25 lefties recovery per turn)
Att - 300
Def - 200
Sdef - 320

and i hit a very stacked one which now looks like this

HP - 467 (I just like the 7 at the end)
Att - 300
Def - 200
Sdef - 320
+6 EV stat points left (24 total ev points - sorry aragornbird)

So my question is where do the last EVs go? I know the standard answer is bump the HP to 473 but i was thinking maybe put them in Sdef since thats his main purpose. The question is will he absorb special hits well enough that i'd miss the hp or is it really just preference?

<Side Note> I wish i always have this problem when i breed;)

Do you mean +6 EV points only or +6 stat points (which equals 24 EVs). Because they are very different. Either way, put the remaining EVs into HP, because putting points into HP raises both your Defense and your Special Defense.
Congrats on the Snorlax though, those are amazing IVs.

That must be frustrating spending that time to get the correct IVs. :\

Yeah - getting both parents with 31 IV's in the main 3 stats (ATT / DEF / SDEF) was easy through cross breeding. That took me like 4 hours, But getting the baby with those IVs carried over and a random hp IV of at least 27 (for the 464 barrier i decided on) took me 2 days with 3 seperate eggs havin hp 25, 25, 26.

What do you think about the ev's though? Definitely the hps right? I knew i should do that that but i just wanted to bounce it off a couple of you guys before i finish the training - don't want to waste unnecessary berries.

If I'm making a Curselax (really, the only version of Snorlax you should be using), I tend to go 180 HP/192 Att/88 Def/48 Sp Def, or there abouts.

Im breeding for Curselax too, I'm just having trouble getting a careful one :\

If you have Emerald, catch a Ditto with Careful, use an Everstone, and then breed with a Snorlax. 50% of the time your baby will be Careful Nature.
