Can I change the nature of the pokemon I want by Saving Right B4 I Get or Capture It?

For instance (Red Garydos) save right I confront it

For instance (Evee) given to me .Do Ijust Save b4 he gives it to me

For instance (cydanquil) b4 handed to me do i jus save b4 i pik

OR DO I HAVE TO RESTART THE WHOLE GAME???

As stated, except for roaming legendaries, their nature is only decided when you interact with them, so you can soft-reset by saving before doing so.
