Ok i'm going to start training my Modest Eevee that will eventually become an Espeon. So far the Eevee has the following moves:
    Tackle
    Sand Attack
    Toxic
    Shadow Ball
It's going to be a special moveset for the most part. I'm pretty sure i want to keep Shadow Ball in there and maybe Toxic. I just want to know what you think are good moves to teach it and what to train it in.

I think it should have something like this
    -Psychic
    -Shadow Ball
    -Calm Mind
    -Toxic/Grass Knot/Or something else.

Needs to be Timid Nature, if you ask me.

    Espeon @ Leftovers
    Ability: Synchronize
    EVs: 4 HP / 252 Spd / 252 SAtk
    Timid Nature (+Spd, -Atk)
    - Psychic
    - Calm Mind
    - Grass Knot
    - Shadow Ball / Baton Pass / Morning Sun
The first 3 attacks are important. The last attack is optional depending on how you want you use it.

Why are natures so important, anyway?

I know they raise certain stats, but is it really tath vital that you need to start all over again?

yes it is....very vital very vital....you need the perfect nature on a poke or else its useless to me.

Yes. In competitive battles, a Pokemon needs every edge it can get. Let's set up a scenario:

Espeon vs. Gengar (both have 110 base Spd, and both have 252 Spd EVs).

    Gengar- Timid (+Spd, -Atk)
    Espeon- Modest (+SpAtk, -Atk)

Gengar goes first, Shadow Ball, Espeon dies. GG.

And what do you mean 'start all over again'? All you need to do is rebreed.
