thats not how you ev train!

to expand You have some of your information wrong, its not Choice Items Its Power Items Power Band,Anklet,Lense,bracer and weight. also berries dont help with ev training they do wipe EV's though. finally Natures Are one of the Most Important things when EVing Use a chart more like

When I started I did a blissy in HP and speed So it dosent matter.

Just make sure you know what items Do what there are loads of Helpful Places to find out about EVing But the Things youve gotta remember are:
-Natures Are Important you trained a Luxuray In attack but its modest which Really dosent Help it has a 10% cut in attach and 10% added to Sp.Atk
-510 Max EV'es 255 Max in Each Stat 4 EV's = 1 Stat
- Base stats Obviousley and Mabey plan A movset Before EVing

that should give you a slightly better understanding or at least give you things to check before EVing

last Point Vitamins Give 10 EV's Per Time used You can only use Vitamins up to 100 EV's in a specific stat
