Personally, I recommend Embodiment of Scarlet Devil and Perfect Cherry Blossom, both being the first games in the Windows series. It's easy to learn how to graze (touch the danmaku/bullets without dying) in both of them, especially on Lunatic mode.

Apparently, according to someone, the timing of the danmaku is aligned with the rhythm of the music playing. And Shift slows down your character, which is helpful if you need to dodge a bunch of danmaku.
