I'm a pen and paper type of guy so that will work well! But, what happens if a poke has already maxed out his EVs? can you still add more to another stat at the expense of another? Or once they max out do they just stay where they're at?

How do you guys go about getting the "unobtainable" legendaries such as Mew and so forth? I've only played FRLG, many times though I must say, and have completed the 1st gen dex with exception of just a couple. I have my copy of Emerald coming this week, but I have not ruled out the possibility...

Just give them their own gyms. That would have been the best way to improve them.

Have played through FRLG many times and the Sevii Islands are horribly boring. The only use I have for them is to collect any pokemon I need to complete my dex. Other than that, they are horribly boring and the story is weak. They could have sued their own league, or even mini league, like maybe...
