Whoa not 500 xD in one stat, if you get one that it's nature gives a boost to defense and Ev train it for defense he would probably have around 320ish defense. Remember it's 255 per stat so if you like you can train him for defense and sp.attack making that a total of 510. You can also only notice this when you're pokemon is level 100 and you can conform that you have gotten all 510 Ev points by going to the house in blackthorn city (the house that's near the ice cave) and she will give you're pokemon a effort ribbon for gaining all 510 points.

Yup that's pretty much what Ev training is. Make sure tho if you do chose to Ev not to fight any other pokemon but the one you're fighting till you are done with the whole 510 points since that will mess up the whole process. Oh and you're super lucky you have the pokerus! That would make my life way easier xD

Ev training at first sounds very confusing and crazy but when you get down it's fairly easy. Example: Each pokemon has 6 stats Hp. Attack. Defense. Sp. Attack. Sp.Defense. Speed. Each pokemon has a stat that they are really strong at. An Example of that is Geodude, they have great Defense power, so every time you kill one Geodude you're pokemon gets +1 to Defense. There are 510 Ev points that you're pokemon can have, so that means you can have 255 Ev points on 2 stats of you're liking. That would mean you would have to kill 255 Geodudes to get you're defense stat into tip top shape, but you don't have to do that since there are items like Macho Brace which double the Ev points you get. As well as the pokerus which you probably heard of, that also makes Ev training a hell of a lot faster. Hope this helps if you need any more help let me know ^.^
