Well, I use the standard rules.

No same Pokemon - which means that you can't have 2 Tyranitar or 1 Tyranitar and a Larvitar.
No One-Hit K.O. Attacks
No Hypnosis Attack.

Like I said before, I honestly do not know considering I don't use Charizard that much. But on my hunch, maybe Sp.Def? Considering just to work against Water and Electric type pokemon which are Super Effective against it. I'd suggest using Smogon or Serebii for Ev Spreads, they usually have good ones for others to use.
You can actually Ev train a pokemon 252 in a stat, so you have 6 EP's to go into one more stat.
I'm not very keen of Charizards, so I can't honestly give my own opinion of it. I would though no that IV's also take a huge part of Ev Training. The closer the Iv's are to 31, the better the pokemon will be for Ev Training.
