    Interesting thread.
I cannot choose one single Type, so I'd train three Pokemon of my three favourite Types, and once the challengers come to me, he/she would pick randomly one Type to fight against.
The Types and Pokemon I'd train would be:
    1- Water: Marshtomp/Starmie/Wingull
    2- Grass: Bayleef/Vileplume/Cacturne
    3- Ice: Glaceon/Delibird/Piloswine
The Gym would have a battle arena with grass and one pool. It can have some trees and rocks too. My tactics would be total offensive.
For the winner, I'd give the AcquaMarine Badge and a TM (Hydropulse, Razor Leaf or Aurora Beam)

Gym Theme/Type: No type, just my favorits.
    Gym Leader: Zephaniah
Location: Some where really hard to get to. I mean really hard. Tons of obsticals, tough wild pokemon. Stuff like that.

    Setup:
The gym it's self would be a plain white room big enough for an epic battle. I also wouldn't have any gym trainers thier. I figure just getting to the gym is training enough.

    Leader Pokemon:
    Charizard
    Vulpix
    Magmortar
    Snorlax
    Gardivour(?)
    Mawille

    Prizes:
    Tough badge

    Gym type: Mixed
    Gym Leader: Kite
Gym setup: A battle field with a mixture of land and water, tall enough to allow aerial battles. Ground: some rough terrain, some smooth. More rough than smooth, with large boulders and the like. Water: Large pool big enough for two Gyarados to battle in with room.
    Trainers: None, just me.
Pokemon: Would always start with Riolu and end with Grovyle. Order of the others would vary, and they are Mantine, Charizard, Umbreon, and Raichu.
badge/Prize: Trust Badge, and TM53 Energy Ball, or TM81 X-Scissor, since there's no TM for Leaf Storm.

Type: Dark, because that hasn't been done in the games yet.
    Leader: Darwin
Location: In a mountainside city or forest city or something.
Setup: An elevator that takes you to a room with one door to the north, south, east, and west. The leader is in the north room. The south, west, and east rooms are all pitch black, but the path to a key is illuminated. However, the key is guarded by the gym's trainers. So, you start by going to the South room (because the rest of the doors are locked), and fighting these trainers:
    South Room's trainers
    Trainer 1
    Houndour, lv32
    Sneasel, lv32

    Trainer 2
    Sableye, lv30
    Houndour, lv30
    Haunter, lv34
After Trainer 2, you get the East Key. The South Room lights up.

    East Room's trainers:
    Trainer 3
    Carvanha, lv32
    Cacturne, lv34

    Trainer 4
    Umbreon, lv36

Once you beat trainer 4, you can just go ahead to take the West Key. The East Room also lights up.

    West Room's trainers:
    Trainer 5
    Stunky, lv35
    Gastly, lv35
    Skuntank, lv37

    Trainer 6
    Houndoom, lv38

    Trainer 7
    Absol, lv36
    Honchkrow, lv38
    Shiftry, lv40

Finally, after beating trainer 7, you can just pick up the North Key. Now for the leader:

    Leader Darwin
Absol, lv40. Moves: Swords Dance, Sucker Punch, Superpower, Night Slash.
Gengar, lv40. Moves: Hypnosis, Focus Blast, Shadow Ball, Dark Pulse.
Houndoom, lv41. Moves: Nasty Plot, Flamethrower, Dark Pulse, Hyper Beam.
Tyranitar, lv44. Moves: Earthquake, Crunch, Ice Beam, Rock Slide.

    Prizes:
Shade Badge, TM 79 (Dark Pulse)

Hhm. This seems fun, though its hard to pick just ONE type. XD

Gym Theme/Type: Flying (It can be flying type, or it could just have wings or float or fly sometimes)

    Gym Leader: Kai (♀)

Location: Near a cave, forest, lake, and feild

Setup: It's like a series of challenges, where you have to solve puzzles and defeat the room trainer. The first room is the forest, where you have to navigate the maze and defeat the trainer for the key to the maze door. The second room is the lake room, where you have to go through pinwheel doors (like Winona's gym) to get to the trainers. Once defeated, you continue through the field to another maze, this time with pitfall traps and snares in your way. You defeat the trainer to go on, where you enter a marble, domed room with a slippery floor. Once defeating the trainer there, you get a key to the exit, where you enter a cave. Once you navigate your way through the dark cave, the last two trainers await you, and once you defeat them it's a straight walk to the gym leader.

    Trainer 1: Bug Catcher Josie
    Beedrill
    Scyther
    Yanmega
    Vespiquen

Double Battle! Trainer 2 & 3: Fishermen Rick and Dragon Master Micheal
    Gyarados ---------- Altaria
    Mantine ----------- Salamence
    Delibird ----------- Dragonair

    Trainer 4: Bird Catcher Thomas
    Xatu
    Skarmory
    Fearow
    Dodrio
    Noctowl

    Trainer 5: Parasol Lady Anna
    Venomoth
    Wormadon (Grass)
    Froslass
    Flygon
    Claydol

Double Battle! Trainer 6 & 7: Ace Trainers Derek and Emily
    Haunter ----------- Chimecho
    Bronzong --------- Tropius
    Gliscor ------------ Mismagius

    Leader Pokemon: Gym Leader Kai

    Drifblim
    Shedinja
    Pidgeot
    Charizard
    Dragonite
    Crobat

    Strategy: Speed! And evasiveness!

Prizes: Float Badge and TM 81, X-Scissor. (More misleading, yay! XD)

... That was fun! Maybe I can use this gym in a fan fiction. xD
