I would choose to ride upon an Aerodactyl. It's a cool and bad-ass Pokemon and it's very fast with a base speed of 130. It would sharply cut through the air and it would be easy an comfortable to ride on.

I would ride Steelix (Giant steel snake :D) and Golurk (Giant robo :D), and possibly Sceptile.
I would run with Blaziken.
