as for openings, i like the FMA ones a lot. 'specially HOLOGRAM. and somehow Naruto had some really decent OP music, even though i never watched the anime. oh, and BLEACH had some nice ones too.
endings, i've to again mention BLEACH with Life is Like a Boat. also, there was another one i thought up, but i forgot..
BUT. the MOST AWESOME MUSIC i've ever heard in anime was obviously. THIS.

THe Inuyasha Endings Every heart and the one with Sesshomaru walking.
All Naruto Openings after the First one are awesome.
And finally the FMA openings are good.
The English version of Negima!? with 1000%SPARKING. Sakasama no Chou from Hell Girl is brilliant, and the first Inuyasha ending, My Will, got me liking Japanese music. ^^
Recently though, I have discovered Slayers, and almost all of it's endings and openings are awesome. Just look up Get Along, Breeze and Give A Reason; they're some of my favourite songs now.
I ADORE all of the Bleach openings except one or two. Most notably:

I really like the openings of Cardcaptor Sakura, Yu-Gi-Oh, Sailor Moon S, Fairy Tail, Maid-Sama, Death Note, Bleach, Angel Beats, are some of my favourite openings.
Far and away my favorite opening is the first opening for Full Metal Alchemist: Brotherhood. I love the mix of acoustic and electric that they use, and the chorus has an addictive hook.
