For me my favorite was the weather wars of Gen 5, a lot of people hated it, but i actually really enjoyed teams being built around / competing weathers. It was always interesting to see how a rain or sand would do vs a sun team. Sometimes people would run 2 weathers on their team just to stop...
A better set for Garchomp is Jolly Rocks/SD/EQ/Outrage. You will threaten way more with it. If your opponent has togekiss or skarm or something, predict for those and switch another poke in. Or perhaps run a magnezone to trap steels/check fairys like clef/klef.
I'm more of a visual person, so it's hard for me to grasp your team from just the words, however You might consider a gimmick like focus sash tyranitar and go adamant max attack/speed Stealth Rock/Stone Edge/Crunch/Fireblast and run an excadrill to abuse the sand.
It overcentralizes the meta game, thought tbh this could be said of a pokemon like landorus-t in the last generation. While dracovish does have some counters, there are only a few, so your team building is heavily restricted.
