There is a way in-game to know your IVs. It's the grading system that you can see inside the 2nd PAGE of the Pok?mon's Summary. EVs, on the other hand, I know nothing about them "in-game"... but, you can always check them EV Calculators available online.

I don't know if it's only me having this bug but everytime I try to play the game, my character's name defaults to Crimson for Male and Scarlet for Female... Is that... supposed to be happening?

Considering that you did everything properly, the reason might be in the Pok?mon Emerald ROM that you used. I also got the same response when I first tried the game and I had to resort to google in order to find another way to overcome the need to patch and get the game directly. *hint-hint*
