I think Sun/Moon with its totem pokemon was the first time I ever thought to use the X-items too, especially after they'd been buffed to 2-stage increases that gen. They're legitimately useful if it's exactly what you need when caught off-guard, and probably especially good for challenge runs...
There's also the fact your rival changes battle sprites a couple times throughout the story, if that's what you meant by three sprites

This is just what I've observed, but flags determine if a sprite loads. Setting a flag without doing anything else won't make an already present sprite disappear, so you need to either use hidesprite or re-enter the map after the encounter is over and the flag is set.
