If you have the physical copy of the game, you could always just go download the Yellow Forrest mystery gift course for the PokéWalker and catch one of the Pikachu there. Alternatively, you could wait 'till you get a rod better than an Old Rod and try to catch a Chinchou.

Nope. The only way to rematch trainers is to exchange Pokégear numbers and wait for them to call and challenge you.

Ah, I eventually got it. The first trophy room thing requires you to beat all 5 courses to move onto the next room. The next room requires you to have a Pokémon that has participated and won all 5 courses. And the last requires you to beat all the 10 records as said on PkStation! Took a bit, but...
