1. How do I put a pokemon to a gym?
Find a gym that is either unoccupied, or the same as your team colour, then click the little icon with the gym symbol and the + in the bottom left of your screen. Then you can choose which pokemon you wish to store. Note that with already occupied gyms of your team colour, the gym has to have a free spot. Level 1 = one person can occupy. 2 = 2 and so on, and to level up a gym, a person of the same team must battle the gym. If you can't yet add a Pok?mon to a gym, try leveling it up.

Pok?mon Gyms have a Gym Rating, like experience. Once a Gym reaches a certain Gym Rating, it will level up (e.g. 4000 raises a Gym to level 2). Gyms lose Ratings should they be defeated, and should they drop below the threshold for a level, the weakest Pok?mon in that Gym will be kicked out. This means you need to constantly battle a Gym until it reaches a rating of 0, when the leader will be kicked out. This will turn the Gym grey and allow you to instantly put your own Pok?mon into the Gym, starting at 2000 Rating. The more Pok?mon you defeat in a gym, the more Rating they will lose.

Fastest way to earn Stardust? Catch a lot of Pok?mon. Easy as that. Use Incenses and Lure Modules to get a lot of Pok?mon to come to you and catch them all. You can also leave Pok?mon in a gym to earn a Defender Bonus which gives you free Coins and Stardust even 20 or 24 hours (unsure myself, mine started on a 20 hour refresh, but it may go up to 24 hours, I'll update you). The more Gyms you defend, the bigger your Bonus. Plop as many Pok?mon into a Gym as you can (but not super weak ones, else they will be defeated easily and your Gym will lose Ratings) and catch a ton of Pok?mon. That's all there is to it.
