4th Gen EV question

ok im ev training my cranidos and i was wondering how many stats can you max out because i was reading the guide on serebii and it said if u want 255 ev's in speed just fight 255 zubat so if i fought 255 golbat(2speed) and 255 bibarel (2attack) would that max out his ev's?

yes it would
don't do 255 Ev's though, do 252 since 252 is divisable by 4. If you do 255 u waste 3 EV's

one more question after you get 255 of the ev is that it for good or do they reset every level

Yep, EVs are permanent unless you use special berries.
Also, you only wanna give a pokemon 252 EVs in a single stat, as EVs only work if its divisible by 4. So for max HP, you would fight 126 Bibarel.
