Holo

There really aren't any "Special Tricks", but there are most certainly ways of pulling holographic cards.
Sometimes, if you lightly squeeze the pack, the little coating over the actual pack may be either soft, or it could be firm. If it feels on the firm side, go with that, since it is most likely a holographic. You could also sneak in with a miniature scale. I am not sure how heavy a non-holographic pack is, but if you compare a holographic pack to a normal one, the holographic one is slightly heavier.
 
I don't advocate this, but, when I used to collect these back in third gen, there would always be several opened packs hiding behind the other stuff on the shelves; kids were (somehow avoiding the security mirror ~_~) opening packs, taking the exes out, and leaving the remaining 'trash' behind, the other eight cards or whatever. I always reported this, but I was too stupid to claim the other eight for myself since they were just sitting around and, then, collected back by the store...it does happen.

Now, I may just have to go buy a few packs and try Mence Master's little trick to see if it works for me xD...
 
Choosing booster

I know of the bending trick that work well most of the time. The booster pack which are harder to bend is most likely to have holo-foil.I had pulled quite a number of Pokemon ex and LvX when the shopkeeper allow me to choose the whole box of booster.
