i like giving kabutops plenty of HP and def evs (Impish Nature) along with Leichi Berry (for an extra attack boost). i wouldn't bother with all those speed evs... kabutops really isn't fast enough. aside from that, it has decent defenses. i wouldn't use Knock Off because it's quite pointless on a poke with common weaknesses (ground, electric, fighting).
mine has Brick Break, but i do suppose Aqua Jet + Stone Edge has good coverage.
