What is the difference between EV and IV training?

Well, EV is training to evolve and IV training stats. Just to make things clear, if I am wrong please do not blame me because this is only what I THINK it is. The best way to go about doing both is what my friend does, or atleast I think:
Do one one day then the next day do the other.
 
I'm pretty sure IVs pass down to pokemon that are bred by other pokemon with good stats, EVs are when you train on a pokemon over and over to get a certain effort point
 
Well, you can't IV train, persé. You have to IV breed. There are guides to IV breeding and EV training plastered all over the internet, so I'll just outline the basics. Evry Pokemon has a certain IV (Individual Value) in every stat (HP, Attack, Def etc.) ranging from 0 to 31. Naturally, the higher this number, the higher the stat. For example, an Attack IV of 5 may give you 105 Attack whereas 31 would give you 131. The idea is to breed higher IVd Pokemon together and try and get as high IVs as possible.

Ev training on the other hand is slightly different. Each stat can hold upto 255 EVs (Effort Values), with each Pokémon able to have 510 overall. The basic idea is to EV train in a Pokemon's best stat, for example Alakazam has high Special Attack and Speed, so it would be prudent to EV train it in those stats. The standard, more commonly used EV spread is 252/252/6, ensuring no EVs are wasted. To gain EVs, you have to defeat certain Pokémon. For example, Gastly yields 1 Special Attack EV, so the more Gastlys you kill, the more Special Attack EVs you get. There are ways to speed up this process, but as I say, search Google for a more detailed explanation.
