EV training them at level 1 may allow the pokes to compete in certain competitions not at level 50? Thats all I can think. Otherwise evs can be removed and added at any level and leveling up a poke in anyway will have no affect at the stats it gets as it grows.

Depends on how easy it is to get the shiny. Fishing shinies are more common than ones obtained through breeding for example. And it all depends on the person you are trading to. If you wait you will find a collector who will offer more than for example a person who is a an "aggressive" market...
