I like Shaymin the most, since it's not your typical big and scary legendary. Dialga's cool, too.

I didn't notice its slowness until I went back and played FireRed. It doesn't bug me a huge amount. Sometimes, though, when I'm fighting a Pokemon with high defense, its HP goes down really, really slowly, and that gets kinda annoying.
