Thanks for the suggestion! I already use XSE, while I am somewhat familiar with changing in-game scripts I am not sure how to change the dialogue. Can I use XSE to do this or is there something extra involved?

Going old school but I'd say Magikarp back in Pokemon Emerald. If you wanted a Gyrados early game, you have to catch a level 5 Magikarp then go through 15 painstaking levels of switch training before finally evolving it.
