Pikachu, its a no-brainer.
Little rat has plot armor so powerful it nerfs or bumps him depending on the opponent. Fighting Arceus? Pikachu has a Thunderbolt that can split atoms. Fighting a lv. 5 Snivy? Someone's drained his batteries. The sheer number and variety of battles fought and injuries sustained should see him have a shrine in Pokémon Tower by now, but instead he's still going strong!
Alternative answer: Charmander, because it was near-death when Ash liberated it
