I never really found any of the Kirby bosses really hard.
The digger thing in Nightmare in Dreamland always tends to frustrate me, though.
O2 was a nightmare when I first fought him. I've grown to like him ever since, but still, that was tough. (I think I was too busy listening to the BG music..)

NOVA while not (exactly) hard itself,it is almost impossible to beat NOVA with out losing some health when battling it's heart.

Nightmare second form in KA was really easy. If you stay in the bottom-left corner, he barely ever hits you.

Now for the hardest, not in any order
Nightmare form 1: Not really hard but really annoying.
The first time I faced Marx he was hard.

And the Squeak leader mouse guy was verrry hard!
