ev'd means if the pokemon in question was trained exceptionally well in a certain stat, and iv's are the values that determine how high/low a pokemon's stats will be, almost like genes in people.

if you want detailed guide, google it or look it up on bulbapedia, smogon, marriland, etc. :) thay have lots of info there.
