i'd have to say jolteon. I've loved it since i first foundout about pokemon and it has a special place in my heart

Espeon and Flareon are my faves in-game.
Espeon has some of the best moves and Flareon... I just like using him out of the 1st Gen Eeveelutions. He's so cute! ^_^ (and that he's a fair fire-type).

And what about Eevee himself? I think he's quite adorable too.

I would definitly go with glacion, umbreon and leafeon those are the best IMO great stats, moves and looks :)
