I personally perfer Havarti on my sandwiches, Mascarpone or cream in my deserts, Provolone and Mosserella (how ever you spell it xP) on italian dishes. A four-cheese blend of a colby, montery-jack, and two cheeders are exellent for mexican while Brie, Alluette, and Boursin are exellent on crackers, bagels, and the such. And who (besides lactose intollerant people) can't resistant smoked or gouda? ;3
