My favorite is a tie between Vaporeon and Jolteon. It used to be just Vaporeon but this past year after using Jolteon in some of my games it's grown on me.

Jolteon is my favourite. Cool looks, speed and special attack.
Special mention to Flareon. IT'S SO FLUFFY!!!

I like all of them quite a bit however Umbreon was the first that I really raised on my own so I'm more inclined to choose that cute lil fella. :)
