What works best for you? Pumping two different stats with 252 EV's each, or try and split the 510 EV's in different stats?

What I've seen is that either you can buff speed and a certain attack attribute (attack / sp. attack) and try to take the opponent Pokémon with a single blow and dare to fail and die ultimately because you missed buffing any defense; or you grow up everything allowing your monster to resist several blows but with the drawback of attacking with less power...

Well it depends on the Pokemon really.

When I use to EV train, I trained mainly in 2 base stats, unless I was building some form of tank, in which case I needed to split it a little differently. But basically, depended on the Pokemon! :)

I don't EV a lot, but the few times I have, usually 252 is invested into two stats and another 4 in something else.

It just depends on the Pokemon for me. I tend to like fast and strong Pokemon, so when I'm doing those I'll train in Speed and its main attack stat, then add the extra four EVs to some other stat like HP. But really it just depends on what the Pokemon is and what I want to do with it.

Depends. Usually 252 for main stats. 4 for the remaining. Sometimes I will go all mathematical and junk, but other than that, I keep it simple.
My tanks are always mathematically weird. Like my Jellicent having 252 HP/ 220 SpD/ 36 Def.
...not too crazy like some other sets, but you get me.

As mentioned a few times before, it depends on the Pokemon. For most sweeper spreads I use 252 Atk or SATk/252 Spe/4 wherever else. For others, I follow whatever EV spread is on Smogon.

The only time I've EV'd has been to compensate for a critter's naturally bad stats. So, I like to max out the bad ones to make them tolerable to battle e.g. Eelektross' Speed. But I'd never competitively battle, so I understand if my EV training runs counter to most other people's appreciation of it.

Clearly the best way to deal with the whole EV system is simply not bothering with it in order to get stuff done faster and have more time to sit around doing nothing. Because being bored while doing nothing is better than being bored while actually doing something. It's not as frustrating.
