    Hey,
I just started getting into seriously training my pokemon for online battles. Should I Ev train the stats that are already high without Ev training or the stats that are lower to bring those up, or is it just a matter of opinion and how one chooses to play?

Usually you want to focus on making the most of the Pokemon's strengths rather than trying to patch up it's weakness via EVs. More often than not the EVs in the weaker stats tend to still not be enough, and then the Pokemon now has less of what made it good in the first place. Like for example EV training a Mega Lopunny in Def/Sp.Defense instead of Attack/Speed still makes it not be able to take hits well enough, while also making it not hit hard enough and leaving it outsped by a lot of stuff it would've outsped with max Speed.

Sometimes though investing in a 'mon's weaker stats do pay off though, like with Sp.Defense Skarmory. Sometimes you can even get pretty specialized and invest in multiple stats to varying degrees for a specific purpose.

Awesome, I was doubling down on the good stats but then started doubting myself.
    Thanks for the help!

Also pay attention to a Pokemon's moveset. Sometimes a Pokemon's better movesets don't match up with it's higher stats. It's up to you to consider what role would be the best for each Pokemon (based on stats AND movepool) and how to achieve that.
