EV Training Troubleshooting

    First, some preliminary information: I have read the articles on both Serebii and Smogon, so I know how EV training works; however, there are a few things that I don't quite understand.

    First: I recently bred an Adamant Kabuto and I decided to try to EV train him. I started by giving him 10 Proteins (100 EV to attack, or +25 points to Attack, yes?) I was slightly skeptical about this because that would mean I would level up and suddenly have 32 attack points. At level 2. Needless to say, I leveled up and only got a +2 to my attack. How does the 25 points from the Proteins factor in? Is is cummulative? I saved before leveling up, but after giving him the Proteins. Do I need to make a new Kabuto, or will those 25 points find their way in there eventually?

    Second: Just for the sake of expirement, I started fighting Hoot-Hoots. However, defeating one would cause me to level up. Does that 1 EV point to HP get thrown out? Or will I get my extra point at level 4 after having defeated 4 Hoot-Hoot. It's unclear on the articles about this if the EV's are reset when the pokemon levels up or if they stack and only change once 4 have been attained.

    I apologize for the density of this post but I would appreciate any help.
     
    There's 1 thing I can tell you. The evs won't change much in it's early levels, but evenbtually all those 25 attack stat points will sneak in, while at level 100 all evs are visible.
     
    Thank you kindly. Now, if anybody happens to know if the EV's stay if 4 weren't gathered before levelling.... Like "rollover EV's" lol.
     
    for example:
    if you defeat a pokemon which gives +1 Ev to speed (Zubat) and defeat 3 of them it means you have 3 EV's in speed. If your pokemon had gotten a lvl or even evolved, it will have the same amount EV's as before.. so in other words. getting a lvl or evolving isn't destroying the EV's you've gotten before.
    One more thing as som1 said already.. don't bother if you don't see the result of your Ev training in the early levels, you'll see them when your pokemon hit 100.

    I would like some advice on EV Training. My focus areas are Attack and HP.
