I'm going by final forms since it's their most mature(I've always seen the evolutions in pokemon like puberty).

Kanto:

Charizard-male
Blastoise-both

Johto:
Meganium-both
Typhlosion-male
Feraligator-both

Hoenn:
All male

Sinnoh:
All male

Unova:
Serperior-both
Emboar-male
Samurott-male

Infernape: male

So the only one that changes is Torchic for me.
