First, i was just reading a post where someone said something about a pokemon having a fire hidden power, what exactly does that mean.

2nd question, how do you calculate how many ev's your pokemon has gained so far??

    1. It means it's poke's hidden power type is fire. Hidden power changes type depending on IVs (To calculate which you need EVs, leading on to...)

    2. EVs are calculated by using EV reducing berries (21-26 i think). Each one reduces EVs in a certain stat by 10, so count how many berries you use and thats a general number.

Alright thanks for the tips on the ev's, but does your hidden power type actually effect anything or is it just a move that could be handy??

Its generally just a handy move. For example, alakazam cannot learn ice beam, which is usually a staple move on any special attacker. So people will breed for HP Ice, which isnt quite as strong as ice beam but is a good alternative. HP ice also varies in strength, with the maximum being 70

I do believe their are some EV calculators, but you have to know the IVs too.

Hidden Power is a move that varies in type, depending on the IVs. Many Pokemon use Hidden Power. Hidden Power [ICE] is a common move on Magnezone because it has good coverage, with a mockBB. So its just a good replacement move for any move that a Pokemon doesn't have access to. It varies in type and power, depending on IVs. But remember it is always a Special Attack.
